Five Fantastic Breakfast Bowls By Shannon Crocker RD www.shannoncrocker.ca @shancrockerRD One look on Pinterest or Instagram and you’ll see that Breakfast Bowls are a big breakfast trend. Why? Well, the foods in breakfast bowls are typically layered in such an artistic way that they make for beautiful photos. Nutritionally speaking, they are packed with nutrient-rich, whole food choices like fruit, vegetables, nuts, seeds, whole grains, eggs, and milk products like cottage cheese. Here are five fantastic breakfast bowls to kick start your morning. Layer them however you like – making breakfast bowls look like edible art is part of the fun! 1. Almond Butter and Apple Bowl In your bowl: ¾ cup low fat cottage cheese, 1 warm sautéed apple, 1 tablespoon hemp seeds, 1 tablespoon toasted almonds. Top with a pinch of ground cinnamon, 1 tablespoon of natural almond butter and 1 teaspoon of honey. 2. Overnight Oats Bowl In your bowl: combine ½ cup of old-fashioned oats with 1 cup of milk and 1 tablespoon of chia seeds. Mix well, cover and refrigerate overnight. In the morning, simply top oats with a big scoop of vanilla Nordica Smooth, fresh blueberries and blackberries, a tablespoon of hemp hearts and a tablespoon pepita (pumpkin) seeds. 3. Avocado and Egg Bowl In your bowl: add cooked brown rice, quinoa or barley (about 1/2 cup), chopped cherry tomatoes, a big handful of baby kale or arugula and half an avocado (sliced or chunked). Drizzle lightly with olive oil and sprinkle with freshly squeezed lemon juice. Top it with a soft-poached egg and a sprinkle of fresh black pepper. 4. Green Goodness Smoothie Bowl In your bowl: blend up an Apple and Kale Smoothie with a little less water so that it’s spoonable. Pour it into four bowls and top each with sliced kiwi, diced green apple, 1 tablespoon of hemp hearts and 1 tablespoon shredded coconut. Makes 4 bowls. 5. Powerful Pink Smoothie Bowl l In your bowl: blend up your favourite strawberry or raspberry smoothie, using less liquid so that it’s spoonable. Pour it into four bowls and layer with fresh berries, a spoonful of homemade granola, 1 tablespoon of hemp hearts and a scoop of vanilla or lemon Nordica Smooth. For a tangy twist, add a couple small spoons of lemon curd. Makes 4 bowls.
