Maple Glazed Bacon and Chive Shortbread

Ingredients

1/2 cup125 mLGAY LEA - Unsalted Butter, softened
2 tbsp30 mLIcing Sugar
Salt
1/2 cup125 mLcrispy bacon, chopped
2 tbsp30 mLChives, finely chopped
1 cup250 mLAll Purpose Flour
2 tbsp30 mLrice flour
1 tbsp15 mLPure Maple Syrup

Instructions:

  1. Grease 8” (20 cm) square baking pan; reserve. In a large bowl, beat butter with sugar and salt for 2 minutes or until light and fluffy.
  2. Add bacon and chives; mix until evenly distributed. In a separate bowl combine all purpose flour and rice flour. Add mixture to butter mixture; stir until just combined. Press dough, in an even layer, into prepared pan. Cover and chill for 30 minutes or until firm.
  3. Preheat oven to 325°F (160°C).
  4. Lightly score dough with knife into 16 squares (do not cut all the way through). Brush top with maple syrup.
  5. Bake for 25 to 35 minutes or until set and lightly golden.
  6. Immediately cut through the scored wedges. Transfer pan to wire rack and let cool completely.
