Pear and Dried Cherry Mascarpone

This Pear and Dried Cherry Mascarpone is a sure way to warm up your dinner table – and your appetite!

    Ingredients

    1 1 Pears, Ripe peeled and cut into a small dice
    1 1 Onion, small finely diced
    1 tbsp15 mLExtra Virgin Olive Oil
    1 tsp5 mLNutmeg
    1/2 cup118 mLDried sour cherries
    1/4 cup59 mLDried blueberries
    1 1 Lemon, Juice
    1/2 tsp3 mLHot Sauce
    1 1 Salerno Mascarpone

    Instructions

    1. In a medium sized non-stick Fry pan over medium high heat, add oil and warm 1 minute. Once oil is warm add onions and sauté for 2-3 minutes add pear and continue to sauté for 3 minutes. At this point add lemon juice, cherries, blueberries and Nutmeg.
    2. Remove from heat and puree mixture for 10-15 seconds it can still be chunky.
    3. Pour mixture back in the pan and place back on the stove over medium high heat, add Mascarpone cheese. Stirring constantly until cheese is melted about 3-4 minutes.
    4. Serve warm on your favourite cracker!
