Cinnamon Orange Bran Muffins

Warm from the oven, these muffins are perfectly dressed with a pat of Gay Lea Butter.

Ingredients

1 pkg500 gNordica Cottage Cheese
1 cup250 mLGAY LEA - Regular Sour Cream
2 2 Eggs, lightly beaten
1/3 cup75 mLLiquid Honey
1/4 cup50 mLGAY LEA - Salted Butter, melted
1 1/2 cups375 mLBran Cereal Flakes
2 cups500 mLAll Purpose Flour
1 tbsp15 mLBaking Powder
1 tsp5 mLCinnamon
1 tsp5 mLOrange Zest
1/2 tsp2 mLBaking soda
1/2 tsp2 mLSalt
1 tsp5 mLBaking soda
1 cup250 mLCarrot, grated
1/2 cup125 mLGolden Raisins(optional)
1 tbsp15 mLGranulated Sugar(optional topping)
1/2 tsp2 mLCinnamon(optional topping)

Instructions:

  1. In bowl, mix cottage cheese, sour cream, eggs, honey and butter until smooth. Add bran flakes and mix well; let stand for 10 minutes.
  2. In large bowl, combine flour, baking powder, cinnamon, orange rind, baking soda and salt. Pour cottage cheese mixture over flour mixture and stir until moistened. Add carrot and raisins; stir until just combined. Spoon into greased or parchment paper lined muffin tins.

Topping (optional)

  1. In small bowl, combine sugar and cinnamon; sprinkle over top of muffins.
  2. Bake in oven for about 25 minutes or until toothpick comes out clean. Let cool for 5 minutes in pan on rack before removing.
