Blueberry Ginger Cottage Cheese Topper

Ingredients

1 cup250 mLBlueberries
2 cups500 mLNordica Cottage Cheese
1/4 cup50 mLWalnuts, chopped
2 tbsp30 mLLiquid Honey
2 tsp10 mLFlaxseeds, (optional)
1 1/2 tbsp7 mLGinger, minced
1/2 tsp2 mLVanilla Extract

Instructions

  1. Flatten blueberries in a small bowl with the back of a fork.
  2. Stir blueberries with cottage cheese, walnuts, honey, flax seeds (if using), ginger and vanilla until well combined.
  3. Cover tightly with plastic wrap and refrigerate for at least 30 minutes or up to 24 hours before serving.
  • Serve with fruit salad or over warm oatmeal.
