Creamy Cucumber Raita

This is a great accompaniment to the Bombay Chicken!

Ingredients

1 1 Cucumber, shredded
1 tsp5 mLSalt
1/3 cup80 mLMint Leaves, finely chopped
1 cup250 mLGAY LEA - Regular Sour Cream
1 1 Green Onion, finely chopped
1 tsp5 mLLemon Zest
Salt, to taste
Black Pepper, to taste

Instructions

  1. In large bowl, toss cucumber with salt and let rest for 15 minutes. Drain and rinse with cold water. Pat cucumber dry on a paper towel.
  2. Return cucumber to bowl and add remaining ingredients. Season with salt and pepper to taste. Serve immediately or
    refrigerate until needed.
