Herbed Cottage Cheese Primavera with Pasta

Ingredients

2 cups500 mLUncooked Rotini or Fusilli Pasta
2 tsp10 mLButter
2 tsp10 mLOlive Oil
1 cup250 mLOnion, chopped
1 cup250 mLRed Pepper, chopped
1 cup250 mLZucchini, chopped
1/4 tsp1 mLSalt
1/4 tsp1 mLPepper
1/4 tsp1 mLMushrooms, chopped
3 3 Garlic Cloves, large, minced
1 tsp5 mLOregano
1 tsp5 mLParsley
1 pkg500 mLNordica Cottage Cheese
1/2 cup125 mLIvanhoe Parmesan Cheese
1/2- 3/4 cup125- 180 mLMilk

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, heat butter and oil in skillet over medium heat. Sauté onion until transparent. Add vegetables, herbs and garlic. Sauté for 5 minutes. Add sautéed vegetables to drained pasta in saucepan. In skillet, heat cottage cheese and Parmesan.
  3. Blend into pasta mixture. Thin with milk as needed. Season with salt and pepper.
  • Go for whole grain or spelt noodles. Slightly nutty and just a little chewy, these types of noodles enhance classic Italian fare with more minerals and fibre.
