Halloumi and Watermelon Salad

Salty cheese is contrasted by cool, sweet watermelon and peppery greens. This will be your new favourite summer salad!

Ingredients

5 oz150 gSalerno Halloumi Cheese
3 tbsp45 mLCanola Oil
2 tbsp30 mLLime Juice
1 tbsp15 mLFresh Mint, finely chopped
1 tsp5 mLLime Zest
1 tsp5 mLmaple syrup
1 tsp5 mLHoney
1/4 tsp1 mLSalt And Freshly Ground Pepper
3 cups750 mLWatermelon
4 cups750 mLBaby Arugula Leaves
1 pkg1 pkgSesame seeds, toasted

Instructions

  1. Preheat grill or grill pan to medium. Grease the grate well. Slice the cheese 1/2 inch (1 cm) thick, cut each slice in half on the angle to make a triangle. Brush the cheese pieces, on both sides, with 1 tbsp (15 mL) oil.
  2. Whisk lime juice with mint, lime zest, maple syrup, salt and pepper; whisk in remaining oil until well combined. Toss all but 1 tbsp (15 mL) of the dressing with the watermelon; reserve in refrigerator until ready to serve.
  3. Grill cheese for 1 to 2 minutes per side or until marked and oozy but not completely melted.
  4. Arrange arugula on a serving platter. Line watermelon along the centre. Arrange warm cheese on either side of watermelon. Drizzle cheese with remaining dressing. Sprinkle with sesame seeds and serve immediately.

Tips

  • For a unique canap√© style appetizer, prepare a half batch of the marinated watermelon, finely dicing the fruit to resemble bruschetta. Grill baguette slices alongside the halloumi. Layer a few arugula leaves onto the grilled bread, top with halloumi and garnish with watermelon mixture.
