Mediterranean Cottage Cheese Salad Topper

Ingredients
- 20 cups (5L) NORDICA 2% - Cottage Cheese
- 1 1/2 cups (375mL) kalamata olives, coarsely chopped
- 1 1/2 cups (375mL) sun dried tomatoes
- 1 1/2 cups (375mL) red onion
- 1 cup (250mL) lemon juice
- 1/3 cup (75mL) dried oregano leaves
- 2 tbsp (30mL) garlic, minced
- 2 tsp (10mL) salt, approx.
Instructions
- Stir Cottage cheese with olives, sun dried tomatoes, red onion, lemon juice, oregano and garlic until well combined. Season with salt to taste. Cover tightly and chill for at least 2 hours or up to 48 hours before serving.
Tips:
- Serve with Greek salad and grilled pita.
