7 Dietitian-Approved Summer Snacks By Shannon Crocker RD www.shannoncrocker.ca @shancrockerRD Looking for some tasty, good-for-you snacks to enjoy on your picnic or by the pool this summer? The abundance of local produce in the summer months makes snacking simple and scrumptious. Here are a few of my favourite summer snacks: Fresh fruit kabobs – enjoy as is or grill and eat warm. Serve with sour cream honey dip – it takes fruit to a whole new level! Raspberries make a yummy snack as they are, right off the bush. Add a squirt of Real Whip Cream to make it a treat. Summer carrots have a sweet mild taste that works perfectly with a blue cheese dip. Make a healthier protein-packed version of blue cheese dip by blending cottage cheese with blue cheese, lemon juice, a bit of milk, a dash of hot sauce and pepper. Remove stems from strawberries and scoop out a bit of flesh (don’t toss it – eat it!). Fill with ricotta cheese. Drizzle with a little honey and top with fresh torn mint leaves. Wedges of juicy watermelon are kicked up a notch when you drizzle them with freshly squeezed lime. Put wedges on a stick for a melon-cicle – kids will love it! Snap peas. If you like a snack with crunch, try snap peas. Serve with flavourful black bean dip, home made guacamole or this mango chutney dip. Fresh tomato bruschetta. There’s nothing like summer tomatoes mixed with fresh garlic and basil. Serve bruschetta on thin pieces of toasted whole grain baguette. Top with a sprinkle of grated Parmesan cheese. Happy Snacking!
