Ingredients
- 1/2 cup (125mL) Nordica Smooth Plain
- 2 tbsp (30mL) GAY LEA - Unsalted Butter
- 6 oz (175g) IVANHOE - Old Sharpe Cheddar, shredded
- 1/2 tsp (2mL) cinnamon, ground
- 4 flour tortillas, large whole wheat
- 1 apple, small, cored and thinly sliced
Instructions
- Stir cottage cheese with cinnamon; set aside.
- Lay tortillas on work surface. Sprinkle half of the Cheddar on one side of each tortilla. Top with apple slices and remaining cheese. Fold tortilla over to enclose filling.
- Melt half of the butter in skillet set over medium-high heat; toast quesadillas, in batches, for 2 to 3 minutes per side or until golden brown and cheese is melted. Repeat with remaining quesadillas, adding remaining butter as needed. Cut into wedges and serve with cottage cheese mixture.
- Substitute pears, peaches or sliced strawberries for apple if desired.
