Zesty Italian Cottage Cheese Salad Topper

Try this Italian-inspired flavoured cottage cheese topper.

  • Yields: 2 ½ cups (625 mL)
  • Preparation: 45 minutes

Ingredients

  • 2 cups (500mL) Nordica 4%
  • 1/2 cup (125mL) red peppers, roasted and finely chopped
  • 1/4 cup (50mL) marinated artichoke hearts, finely chopped
  • 2 tsp (30mL) SALERNO - Grated 100% Parmesan Cheese
  • 1 tsp (15mL) capers, finely chopped
  • salt
  • pepper

Instructions

  1. Mix cottage cheese, roasted red peppers, artichoke hearts, Parmesan and capers well. Season with salt and pepper to taste.
  2. Cover tightly with plastic wrap and refrigerate for at least 30 minutes or up to 24 hours before serving.
  • It’s great paired with salad and crusty Italian bread.
