Nordica High-Protein Lime Cilantro Dressing with Mexican Street Corn Salad

This creamy cottage cheese dressing is as versatile as it is tasty. Apart from a topping on salad, it’s great to amplify tacos, add protein to sandwiches, or as a dip for vegetables.

Ingredients

HIGH-PROTEIN LIME CILANTRO DRESSING

  • 1 cup (250mL) Nordica 2%
  • 1/2 avocado, ripe
  • 1/4 cup (50mL) cilantro leaves, lightly packed
  • 3 tbsp (45mL) fresh lime juice
  • 2 tbsp (30mL) canola oil
  • 1 large clove garlic, minced
  • 1/2 tsp (2mL) salt

MEXICAN STREET CORN SALAD

  • 8 cups romaine lettuce, torn
  • 1 1/2 avocadoes, ripe
  • 475 mL (227g) grape tomatoes, halved
  • 1 1/2 cups (375mL) frozen corn kernels
  • 1 tsp (5mL) GAY LEA - Unsalted Butter
  • 1/2 tsp (2mL) chili powder
  • 1/2 cup (125mL) green onion, chopped
  • 1 cup (250mL) Canned black beans, drained and rinsed

Instructions

  1. Dressing: Combine cottage cheese, avocado, cilantro, lime juice, oil, garlic, salt and pepper in a blender. Blend until smooth, adding up to 1/4 cup (60 mL) of water as needed to thin consistency. Makes about 1 1/2 cups (375 mL) dressing.
  2. Toast 1 1/2 cups (375 mL) unthawed frozen corn in a dry nonstick skillet until lightly browned. Mix in 1 tsp (5 mL) Gay Lea butter and 1/2 tsp (2 mL) chili powder until coated. Cool to room temperature. Alternately, brush butter mixture over a leftover cob of corn and grill until toasted. Slice kernels from cob to use in the salad.
  3. Salad: Combine romaine, avocado, tomatoes, corn, beans and feta (optional) and green onion in a large salad bowl. Add dressing to taste and gently toss to combine.
  • TIP: Add more water to the lime cilantro dressing for a thinner texture if desired.
  • TIP: Use frozen corn for quick and easy prep.
  • TIP: For an additional protein boost, add in leftover sliced cooked chicken or steak.
  • TIP: Store leftover dressing in a jar with a tight-sealing lid in the refrigerator for up to 3 days
  • TIP: Crumble Feta cheese overtop the salad for additional texture and flavour
