Ingredients
- 2 cups (500mL) Nordica 4%
- 1/2 cup (125mL) red peppers, roasted and finely chopped
- 1/4 cup (50mL) marinated artichoke hearts, finely chopped
- 2 tsp (30mL) SALERNO - Grated 100% Parmesan Cheese
- 1 tsp (15mL) capers, finely chopped
- salt
- pepper
Instructions
- Mix cottage cheese, roasted red peppers, artichoke hearts, Parmesan and capers well. Season with salt and pepper to taste.
- Cover tightly with plastic wrap and refrigerate for at least 30 minutes or up to 24 hours before serving.
Tips:
- It’s great paired with salad and crusty Italian bread.
